I love it I must admit I don't use it as often as my other smokers but if I had to choose a smoker for a friend this would be the one. I have? to add chips about once an hour for the first 6 hours or so

Agreed ... I've? never dried out my pork, I run it up to 190-195 then pull it out of the smoker and vent the foil a little and let it rest, it will normally rise up to around 200 while resting, then cool down to pulling temps.. mmm, great video

@vanscoyoc You can eat the meat at 165 but the meat will be tough. The butt or Pork Shoulder is a very tough piece of meat and has to? be cooked to a higher temperature slowly to break down the connective tissues in it. If done right it falls apart like a roast and is not dry at all. You just have to try it to believe it. @ 165 you would need a knife to slice it it would not pull. Look up any pulled pork recipie online and you will see most take it to that temp.

No problem that is about an 8 pound Butt. I have done both smokes with a water pan and without. I like using a water pan for long smokes because it helps even out the temp. Especially when you are not using an electric smoker like this one. In my UDS smoker for example the water pan helps keep it at 225-240. I insert the digital thermometer about half way through the smoke. Same temp the whole time. ? This method is not the end all but I like it and the product has always been good.

A few questions from a novice: how big of a? butt are you using? Wet or dry smoke? do you use the internal thermometer throughout? 235 degrees even during the foiling process? Thanks! I haven't been satisfied with my pulled pork so far (different process altogether from yours)

Thanks I also will cook this over coals in My UDS smoker pulled pork is awesome and hard to mess up. Don't tell your friends how easy it was to cook or you? will be cooking one every weekend. Just got my camera back so I will be adding more BBQ videos soon.

So I followed this process but used my new Weber bullet and bone in pork shoulder. After a 14 hr smoke with apple wood and hickory (apple juice in the steam bowl) and a 3 hr rest (wrapped in a towel and? placed in a cooler) it turned out to be hands down the best damn pulled pork I evah had! All my neighbors thought so too!!!

That looks delicious! I've tried a Costco boneless pork shoulder cooked in a CookShack elecrtric smoker oven using apple wood chunks. Soaking the pork in apple juice and onions for at least? 24 hours before smoking adds complexity to the final flavors. Then I mix the pulled pork with my BBQ Sauce for Amateurs and voila! the best pulled pork sandwich in Silicon Valley. Thanks for a great video!
